APPLE CHOPS
(Serves 4)
4 pork chops
1/2c onion, chopped
2T vegetable oil
1/2t salt
2 apples, peeled and sliced
2T brown sugar
1/2t ground mustard
3/4c hot water
1/8t cloves, ground
Preheat oven to 375-degrees.
Heat oil slowly in skillet. Saute onion until tender, remove and set aside. Brown pork chops in oil. Remove chops and place them in a baking dish. Sprinkle with salt and pepper. Cover chops with apples and cooked onions. In a small bowl, combine sugar, mustard, cloves and water. Pour mixture over chops and bake covered for 30-45 minutes.
SOUTHERN CHOPS
(Serves 4)
4 pork chops
1/2c cola flavored beverage
1/2c ketchup
2T brown sugar
Preheat oven to 350-degrees.
Place pork chops in baking dish. In a small bowl, mix cola and ketchup. Pour liquid over chops and sprinkle with brown sugar. Bake uncovered 1 hour, or until internal temperature of chops reaches 160-degrees.
HAM-N-PASTA
(Serves 4)
2c egg noodles, cooked
1c precooked ham, cubed
1/2c cheddar cheese
1 can cream of mushroom soup
1/2 cup milk
Preheat oven to 375-degrees.
Place precooked noodles and ham in a casserole dish, tossing mixture together. Add cheese, soup and milk, stirring until blended. Bake for 25-30 minutes.
SUNDAY HAM HASH
(Serves 4)
4 white potatoes, peeled and cubed
2T olive oil
1 onion, finely chopped
2c diced ham
1/4c parsley, chopped
1c sour cream
2T olive oil
salt and pepper to taste
Place potatoes in saucepan, cover with water, and cook over medium heat until potatoes are tender. Drain and set aside. In a large skillet, heat 2 tablespoons of oil over medium heat. Add onions and saute. Add ham and saute until ham browns. Remove from heat and set aside. Heat remaining oil. Add potatoes and cook until browned. Sprinkle with salt and pepper. Add ham and parsley. Cook all ingredients until thoroughly mixed and warm. Serve with sour cream.
HONEY HAM
(Serves 6)
4lbs. precooked ham
1/4c cloves
2c honey
2/3c butter
1/4c corn syrup, dark
Preheat oven to 325-degrees.
Score ham and add cloves. Line baking dish with foil and place ham, cut side down, in dish.
In double boiler, heat corn syrup, honey and butter.
Brush glaze over ham. Bake 1 hour, 15 minutes. Baste ham every 20 minutes during cooking. During the last 5 minutes of baking, turn on broiler to caramelize glaze.
