2 c sugar
1/2 c white corn syrup
1/2 c water
Cook to 250 degrees. Remove from heat and add 1/4 tsp cream of tartar. Pour slowly into a beaten egg white. Add flavoring (vanilla, peppermint or spearmint) and food coloring. Beat until it starts to lose its gloss. Put about 1/2 c powdered sugar out on board or sounter. Work candy in with hands. Roll out in long thin rolls and cut into pieces with scissors.
